One Chicken, Five Masalas: The Meal Prep Trick That Kills Dinner Boredom

Let's be honest about meal prep. You grill five chicken breasts on Sunday, and by Wednesday you're staring into the fridge like it owes you an apology. The problem was never the chicken — it's that you seasoned it one way and committed to one flavor for the whole week.

Here's the fix, and it comes straight from the Indian kitchen: keep the base neutral, and let the masala do the transforming. Cook one big batch of simply seasoned chicken and rice, store it plain, then finish each night's portion with a different spice blend. Five dinners, five personalities, one hour of prep.

The Neutral Base

Toss 2½ pounds of chicken thighs (they reheat better than breasts) with oil, salt, and pepper. Roast at 425°F for about 25 minutes, or pan-sear and finish in the oven. Cook a big pot of basmati rice alongside — plain, just salted. Portion everything into containers and resist the urge to season further. That blank canvas is the whole trick.

Now, the fun part. These five blends each take five minutes to mix, and they'll live in your spice drawer for weeks.

1. Tandoori-Style (Yogurt Marinade Finish)

Whisk ½ cup plain yogurt with 1 tablespoon tandoori masala, a squeeze of lemon, and a grated clove of garlic. Warm sliced chicken in a skillet, stir in the sauce, and let it bubble for two minutes. Serve over rice with cucumber slices. Tastes like it came off a clay oven.

2. Butter Chicken Shortcut

Melt 2 tablespoons butter, add 1 tablespoon garam masala and a spoonful of tomato paste, then stir in ¼ cup cream. Toss in the chicken until coated. Nobody at your table needs to know this took eleven minutes.

3. Chaat Masala Finish (The Wild Card)

Chaat masala is the blend most American home cooks haven't met yet — tangy, salty, slightly funky from black salt. Slice cold chicken over a rice bowl with chopped tomato, red onion, and cilantro, then dust generously with chaat masala and a squeeze of lime. It eats like a street-food salad. No reheating required.

4. Kadhai-Style Skillet

Sauté sliced bell peppers and onion in a hot pan, add 1 tablespoon kadhai masala (or coriander plus a little Kashmiri chili), then the chicken. One pan, ten minutes, restaurant-level aroma — your kitchen will smell incredible.

5. Coconut Curry Comfort

Simmer the chicken with a can of coconut milk, 1 tablespoon curry masala, and a handful of frozen peas. Pour it over the rice like a stew. This is the one for rainy Thursdays.

Why This Works

Indian home cooking has always worked this way — the masala dabba, the round spice box with seven compartments, exists precisely so a cook can pivot a dish's entire identity in thirty seconds. You're not making five recipes; you're making one recipe five ways. And because each blend keeps separately in a small jar, you can mix a month's worth in one session.

The shopping list barely changes week to week: chicken, rice, yogurt, coconut milk, whatever vegetables look good. The variety comes from the spice drawer, which is exactly where it should come from. Sunday effort, Monday-through-Friday range — that's a system worth stealing.
